Maple Syrup Parfait

Ingredients :
  • 1 cup pure maple syrup
  • 3 egg yolks
  • 3 egg whites
  • 1 1/2 cups whipped cream
  • Some strawberries
  • 1 tbsp Ron Carioca white rum
Preparation :

Heat the maple syrup in a bain-marie. Beat the egg yolks well and slowly fold them into the syrup, stirring constantly. When the mixture thickens, let it cool. Then add the whipped cream and stiffly beaten egg whites. Pour into a soufflé dish. Let it chill for a few hours in the freezer. Before serving, add a garnish of sliced strawberries. Drizzle with rum.
