Turkey Hill Brandy Snap

Ingredients :
  • ¼ cup pure maple syrup
  • ¼ cup molasses
  • ½ cup butter
  • 1 cup sifted flour
  • ⅔ cup granulated sugar
  • 1 tsp powdered ginger
  • 2 tbsp. teaspoon of Schenley cognac Coronet VSQ
Preparation :

Combine syrup and molasses and bring to a boil. Remove from heat. Add butter and let it melt. Sift together dry ingredients and gradually add them to the syrup mixture. Then add brandy, stirring well. Drop by small spoonfuls onto a lightly buttered cookie sheet and bake in a slow oven (300°F) until thin and 'lace-like' (about 10-12 minutes). Remove from oven. Gently loosen each cookie and roll it around the handle of a wooden spoon. Chill and serve topped with whipped cream.
